I often find myself standing in checkout lines in the grocery store eyeing the contents of the carts around me. There it is. I’m a little embarrassed to admit that I’m fascinated with the things that other people buy. Surely I’m not the only one? (I mean, really, what kind of a person buys canned asparagus?!)
Yesterday I was at the local Sprouts standing behind a particularly cheery woman wearing a perfectly coordinated athleisure outfit. You know the type. She’s the one that’s obviously on a first name basis with the entire staff of the local Lululemon store, flaunts legs of muscle chiseled to feminine perfection, and who’s perfectly highighted hair falls interestingly into place in that “I just did a spin class and still look amazing” kind of way. She looked rosy and glowing and I simply had to know what was in her cart.
Of course, all the usual suspects were there. Fruits, vegetables, some kind of a less than appetizing soy-based something-or-other, and something else…Caulipower Pizza Crust.
Cauliflower pizza crust? Brilliant! I quickly abandoned my spot in line and ran to the frozen food aisle. There it was, the last one, perched on the shelf like a Faberge Egg. I lunged for it, and tossed it triumphantly into my cart. Why, thank you, Ms. Lulu-Wonder Girl, for passing this well-kept secret on to me!
Fast forward to today. Finding myself with a little time on my hands and a strong urge to eat pizza, I decided to give this pricey pizza crust a try. I enjoy cauliflower, and I like pizza more than I would like to admit, so this should be a winning combination. Oh my…It was a revelation!
Before I proceed, let me make one thing very clear: I am not a skilled home chef. I have a few dishes in my repertoire, but to say I’m someone that can whip up something brilliant at the drop of a hat is utterly false. There have been many dishes over the years that I’ve made, only to have my daughter beg me to promise I’d never make it again. But this, my friends, this turned out to be so good! My husband, who is the definition of a food snob actually liked it! If you’re trying to eat healthy, and you feel like you’d sell an arm if it meant you could have only one piece of pizza, then you simply must try this.
Here’s what you’ll need:
1 Caulipower Original Pizza Crust (Or similar)
1/3 C Marinara sauce
2 oz fresh mozzarella, cut into small pieces
1 Tbsp grated parmesan
6 basil leaves
Pam olive oil
salt, pepper, and red chili flakes
Here’s what you’ll do:
Set your oven to preheat to 425*.
Lightly spray the outer edge of the crust with Pam.
Spread the marinara evenly over the frozen crust.
Cover with the fresh mozzarella pieces.
Evenly sprinkle the parmesan over the entire thing.
Tear the basil leaves, distributing them evenly.
Add a pinch of salt, pepper to your liking, and (if you like a little heat) sprinkle with red chili flakes.
Place the “pizza” directly onto the center rack of your oven and let it cook until the cheese is melted and the outer edges of the crust are nicely browned. (Roughly 8-10 minutes)
…and that’s it! Easy, right?
